This dish will appeal to the Vegetarians in the family, and even those who aren’t! Quinoa is a nutrient-dense seed, often mistaken as a grain and is a fabulous side starch with any fish or chicken meal. Easy to prepare, just follow the instructions on the packet!
Preparation Time: 30 min Cooking Time: 20 min
Skill Level: Easy - Medium Serves: 6
INGREDIENTS
1 cup dried quinoa – follow instructions on packet
2 lebanese cucumber- diced
1 punnet cherry tomatoes – halved
1 yellow capsicum – chopped
250g Feta – cubed
200g pitted Kalamata olives
Handful Fresh oregano – leaves picked from stem
2 tbsp Olive oil
1 Lemon – juice
Salt to taste
Cracked Pepper
Fresh mint finely chopped (optional)
METHOD
Mix all the first 7 ingredients together and then dress with olive oil, fresh lemon juice, salt and cracked pepper. Top off with finely chopped mint if you want to kick it up a notch!
