A hearty winter warmer that can be enjoyed as a starter or a meal. Serve with a fabulous sourdough!
Preparation Time: 30 min Cooking Time: Approx 1-1 1/2 hours

INGREDIENTS
500g pkt dry mixed soup mix (with barley)
4 L Chicken stock or water with chicken stock powder
1 brown onion diced
2 carrots, peeled and diced
1 parsnip, peeled and diced
2 white potatoes diced
500g tin chopped tomatoes
2 tbsp olive oil
1 tbsp dried oregano
1 tbsp dried sage
2 Bay leaves
Salt to taste
2 tsp white pepper
½ cup chopped continental parsley
METHOD
In a large Soup Pot, over medium to high heat, add 2 tbsp olive oil and sautee onion, salt and herbs for 1 minute. Rinse dry soup mix and then add into pot, mix in with onions and herbs. Add carrots, parsnip and potatoes and then cover with stock. Add in tin tomates and bay leaves and bring to a boil. Make sure to stir occasionally. Once soup is boiling, turn to low and cover with lid. Cook for 45 – 50 minutes until barley is soft. When tender, take off heat, add chopped parsley, salt if needed and white pepper.
Serve immediately or allow to rest.
