INGREDIENTS

2 x Hass Avocados (Ripe)avocadosoup

2 C Plain yoghurt

1 ½ C Vegetable stock (may need more for smoother consistency)

2 Spring onions chopped

1 handful chopped coriander

1 tsp Dijon mustard

1 tsp cumin

2 lime (juice)

Salt and pepper to taste

 METHOD

1. Cut avocado in half, remove seed and scoop flesh into food processor.

2. Add remaining ingredients and blend to a smooth consistency.

3. Refrigerate for 1 hour, serve and garnish with coriander sprig.
