INGREDIENTS
125g softened butter
1 ½ C brown Sugar
½ C castor Sugar
2 eggs
2 tbsp golden syrup
½ tin condensed milk (approx 200g)
2C flour
¾ tsp tsp baking soda
½ tsp salt
220g white chocolate bar (chopped)
1 C dried cranberries
METHOD
- Pre-heat oven to 180. Line large baking tray with baking paper.
- Place softened butter in MixMaster, using paddle, beat butter until pale and fluffy. Add brown and white sugar, continue to mix until combined.
- Add 1tsp vanilla essence and two eggs, one at a time.
- Drizzle golden syrup and condensed milk and mix until batter is smooth.
- In three parts add flour (with salt and baking soda added), mix well. Then fold in dried cranberries and chopped white choc pieces by hand.
- Drop tablespoon of dough onto prepared tray, allowing space in between each cookie as they will spread when baking. Bake in middle rack for 8-10 minutes or gold in colour. Don’t overcook.
- Cool on wire racks for 10 minutes, then enjoy with a hot drink!
