INGREDIENTS

125g softened butter

1 ½ C brown Sugar

½ C castor Sugar

2 eggs

2 tbsp golden syrup

½ tin condensed milk (approx 200g)

2C flour

¾ tsp tsp baking soda

½ tsp salt

220g white chocolate bar (chopped)

1 C dried cranberries

 

METHOD

  1.  Pre-heat oven to 180.  Line large baking tray with baking paper.
  2. Place softened butter in MixMaster, using paddle, beat butter until pale and fluffy.  Add brown and white sugar, continue to mix until combined.
  3. Add 1tsp vanilla essence and two eggs, one at a time.
  4. Drizzle golden syrup and condensed milk and mix until batter is smooth.
  5. In three parts add flour (with salt and baking soda added), mix well.  Then fold in dried cranberries and chopped white choc pieces by hand.
  6. Drop tablespoon of dough onto prepared tray, allowing space in between each cookie as they will spread when baking.  Bake in middle rack for 8-10 minutes or gold in colour. Don’t overcook.
  7. Cool on wire racks for 10 minutes, then enjoy with a hot drink!
