Passover - a time shared with family and friends.  Copious amounts of food; yummy eggs in salt water, eye-watering chrain, and...matzo, lots and lots of matzo!  This recipe is a delicious twist on our eight-day obligation.  I dare you to only have it for dessert!

Preparation Time:  10 min                Cooking Time: 20 min            

 Skill Level:  Easy - honest!       Serves:  1-6

INGREDIENTS
4-6 unsalted matzos (broken into large pieces)
250g x unsalted butterchocmatzoh
1 cup brown sugar (packed firmly)
¾ cup roughly chopped milk or dark chocolate
½ cup coarsely chopped almonds (almonds)

METHOD
Pre-heat oven to 190
1.     Line 1 large cookie sheet with foil (shiny side down), then place a piece of baking paper on top.
2.    Place broken matzo onto tray, overlapping pieces if necessary.
3.    In a large, heavy-bottom pot, melt together butter and brown sugar over a medium heat and stir constantly.  Once the caramel bubbles, about 4 minutes, continue to stir mixture for another 2 minutes.
4.    Carefully pour caramel over matzo and bake for 12 minutes.  Keep an eye on the caramel, as it can burn if your oven runs hot.
5.    Remove from oven and scatter chocolate on top.  Wait 5 minutes, then spread melted chocolate.  Add chopped almonds if desired.
6.    Place tray in fridge for 2 hours to set.
7.    Make a cup of tea and enjoy!
