I love chocolate! This is one of my favourite recipes to make with Mum. She boils the water and chops, I get to stir all the ingredients together and then lick the bowl and spoon when done! These brownies are really popular with our friends too. Sometimes we even bake extra and double wrap them so they can go in the freezer for a whole month...but they just never seem to last that long!

Servings: Makes 12 BIG or 24 SMALL Skill Level: Fun ‘n Easy
INGREDIENTS
250g milk chocolate, coarsely chopped
250g WESTERN STAR unsalted butter, cubed
4 eggs, lightly beaten
215g (1 cup) caster sugar
1 tsp vanilla essence
50g (1/3 cup) plain flour, sifted
1/2 tsp baking powder
100g dark chocolate, extra, coarsely chopped
Chocolate frosting
125g WESTERN STAR unsalted butter, room temperature
80g (1/2 cup) icing sugar mixture
125g dark chocolate, melted, cooled
METHOD
- Preheat oven to 180°C. Grease a 20 x 30cm shallow slice tin with a WESTERN STAR butter wrapper. A chef tip my mum taught me! Then line the tin with baking paper, allowing the sides to hang over.
- In a heat-proof bowl, place the 250g milk chocolate pieces and the WESTERN STAR unsalted butter cubes. Place bowl over a saucepan half-filled with simmering water. The bottom of the bowl shouldn’t touch the water. Stir with a metal spoon until the chocolate melts and the mixture is smooth. Set aside to cool slightly.
- Combine the egg, sugar and vanilla in a large bowl. Stir in the chocolate mixture. Add the flour, baking powder, and extra chocolate. Stir until well combined. Pour into the prepared pan. Bake for 40-45 minutes or until a skewer inserted into the centre comes out clean. Set aside in the pan for 10 minutes to cool before turning onto a wire rack to cool completely.
- To make the chocolate frosting, use an electric beater to beat the butter and icing sugar until pale and creamy. Add the chocolate and beat until fluffy. Spread over the brownie. Trim the edges and cut into squares to serve.
