INGREDIENTS
6 x Baby bok choy (rinsed, cut into strips length ways)
1 x Lebanese cucumber (cut in half, sliced)
1 x Avocado (sliced-optional)
100g candied almonds (roughly chopped)
Handful chopped coriander
METHOD
- Assemble baby bok choy on flat platter, scatter sliced cucumber, avocado and candied almonds.
- Drizzle with dressing and sprinkle with chopped coriander. Enjoy with fish or chicken!
SESAME BALSAMIC DRESSING
1 C Canola oil
¼ C Sesame oil
¼ C Rice wine vinegar
¼ c Balsamic vinegar
1tsp Dijon mustard
1tbsp brown sugar
Juice of 1 lemon
2 tbsp Soya sauce
METHOD
Whisk all ingredients until well-emulsified. Set aside and use just before serving.
