INGREDIENTS

6 x Baby bok choy (rinsed, cut into strips length ways)

1 x Lebanese cucumber (cut in half, sliced)

1 x Avocado (sliced-optional)

100g candied almonds (roughly chopped)

Handful chopped coriander

 

METHOD

  1. Assemble baby bok choy on flat platter, scatter sliced cucumber, avocado and candied almonds.
  2. Drizzle with dressing and sprinkle with chopped coriander.  Enjoy with fish or chicken!

 

SESAME BALSAMIC DRESSING

1 C Canola oil

¼ C Sesame oil

¼  C Rice wine vinegar

¼ c Balsamic vinegar

1tsp Dijon mustard

1tbsp brown sugar

Juice of 1 lemon

2 tbsp Soya sauce

 

METHOD

Whisk all ingredients until well-emulsified.  Set aside and use just before serving.
