AUSSIE DAMPER
It seems most likely that this Bush Tucker classic is an Aussie version of Irish Soda Bread. It was probably introduced by Irish Settlers from years gone by and many variations exist but this is a great modern version. Enjoy warm with some butter and vegemite!
Preparation Time: 25min Cooking Time: Approx 35-40 min
Servings: 1 large loaf Skill Level: Easy
INGREDIENTS
4 C self-raising flour
1 tsp salt
2 tsp sugar
2 tbsp butter (room temp)
1 C milk
½ C water
Method
- Pre-heat oven at 200 C and grease baking tray.
- Sift the flour and salt into a bowl and mix in the sugar.
- Rub in the butter with your hands until a fine breadcrumb texture is achieved.
- Form a well in the middle of the flour, pour in the milk and water, and mix well with a knife until the dough comes clean from the sides of the bowl.
- Turn out onto a floured board and knead until smooth and silky, approx 3-5 min.
- Shape into a round loaf, cut a deep cross in the top and bake in a preheated oven at 200 C for 25 minutes. Then lower the temperature to 180 C and cook a for another 10 - 15 mins. The loaf should be golden brown and sound hollow when tapped.
- Allow to cool slightly and enjoy with a generous spread of butter and vegemite! Or jam if that’s your preference!.
