A Super Healthy, yet simple dinner for the whole family to enjoy!
Preparation Time: 45 min (add 2 hours for marinating) Cooking Time: 35 min
Skill Level: Easy to Medium Serves: 4-6INGREDIENTS
4 Chicken Breasts (Butterflied so that you get two pieces from one)
2 garlic cloves, sliced
½ brown onion thinly sliced
1 bunch brocolini3 bunches of baby bok choy
2 tbsp olive oil
Salt and pepper to taste
Chicken Marinade
½ cup tamari or soy sauce
½ cup rice wine vinegar
¼ honey
¼ cup sesame oil
Juice of half an orange
1 tbsp fish sauce (optional)
2 whole garlic cloves
¼ “ piece of ginger
Place butterflied chicken into large Ziploc...pour in all of the above ingredients and allow to sit in fridge for minimum of two hours.
METHOD
Grill chicken on BBQ or indoor grill pan, allow to rest while you prepare the wilted greens. Drizzle of olive oil in large pan, add sliced garlic and onion and sautee over medium heat, careful not to burn, pour in the remainder of the marinade, cook until bubbling, stir constantly and now add greens. Cover with lid for one minute, once the tip of the bok choy leaf is wilted the greens should be done! Slice chicken and place on top...enjoy!
